Ingredients for Kashmiri Dum Aloo:
½ kg Baby Potato
Mustard oil
Kashmiri Red Chilli Powder
2-3 long
2-3 cardamom
3-4 black pepper
One cup chopped onion
One cup chopped tomatoes
1/2 cup yogurt
Half a teaspoon turmeric powder
Half a teaspoon garam masala
Two teaspoons fennel powder
½ teaspoon sugar
Salt to taste
Method of preparation of Kashmiri Dum Aloo:
First wash the potatoes thoroughly and after thoroughly cleaning, boil the potatoes.
Remove the boiled potato peels and make small holes in them with the help of toothpick.
In a bowl, mix a small amount of red chili powder, turmeric powder and salt with these potatoes and fry them well by adding them to the oil.
Mix Kashmiri red chilli powder in curd and keep it separately.
Now heat the oil by placing the pan on the gas.
When hot, add whole spices to it and stir it for a while and then add onions.
Fry the onion till it turns golden in color and then add tomatoes to it.
Mix the onion and tomato well and add all the spices.
Stir this mixture continuously and cook on medium flame for 2 to 3 minutes.
When the oil starts releasing from the spices, turn off the heat and add yogurt mixture to it.
Mix it well and then turn the gas on low flame.
Now add more salt as per taste and also add fried potatoes and mix well.
Now to make gravy, add water as required. Let it cook on low heat for 8 to 10 minutes.
Finally add half a teaspoon of sugar and Kasuri methi, mix it and serve hot.
